Lots of healthy ideas

I’m not very creative in the kitchen, so I was very happy to see that Fortino’s (and the other Loblaw’s properties) have an amazing recipe section.  I found the chili recipe in the “Heathier Choices” section. And you can narrow you search even further to suit your needs.

Putting the healthy recipes together with the PC Guiding Stars program is a recipe for success!

The Hearty Vegetarian Quinoa Chili is a one-pot meal that was easy to prepare and full of stars!!

 11 Stars!!

It could have been a 12-star meal, but they were out of Quinoa, so I went with the Bulgar & Quinoa which was 1 star less.

So yummy! So filling!

When they say “hearty,” they weren’t kidding!  

I had left out the jalapenos that the recipe called for because I was worried it would be too hot.  But I think a little would have given it a bit of added flavour.

 

Here is my adaptation of the PC recipe!

Hearty Vegetarian Quinoa Chili

Ingredients
  1. 4 tsp (20 mL) olive oil
  2. 2 onions, diced
  3. 2 tbsp (25 mL) chili powder
  4. 1 can (796 mL) PC Blue Menu Diced Tomatoes
  5. 1 can (540 mL) PC Blue Menu 6 Bean Medley , drained and rinsed
  6. ½ cup (125 mL) PC Organics Quinoa
Instructions
  1. In large saucepan, heat oil over medium heat. Cook onions for 12 to 14 minutes, stirring often, or until golden.
  2. Stir in chili powder; cook 1 minute longer, stirring frequently.
  3. Stir in diced tomatoes and juices, beans, quinoa and 1 cup (250 mL) water. Bring to a boil.
  4. Reduce heat to medium-low, cover and cook for 20 minutes or until quinoa is tender.
  5. Serve garnished with PC Blue Menu Yogurt Spread and chopped fresh coriander, if desired.
Notes
  1. Original recipe called for mushrooms and jalapeno.

As 2014 is coming to a close, my 3rd year as a Chicken Farmer Ambassador is coming to an end!  I have loved sharing so many amazing recipes and important chicken information for the Chicken Farmers of Canada!  They are an amazing organization that focuses on keeping families healthy and safe.

Asian Chicken Wings

These addictive Asian-inspired wings are sticky and delicious. Make sure to have lots of napkins on hand when you make this recipe!

Ingredients
  1. 3 lb (1.4 kg) chicken wings, split
  2. 1 cup (250 mL) hoisin sauce
  3. 3 tbsp (45 mL) sesame seeds, toasted
  4. 1 tsp (5 mL) ginger, freshly grated
  5. 2 tbsp (30 mL) vegetable oil
  6. 1/2 green pepper(s), cored, seeded, cut into thin strips
  7. 1/2 red pepper(s), cored, seeded, cut into thin strips
  8. 1 tsp (5 mL) sesame oil
Instructions
  1. Preheat oven to 375°F (190°C).
  2. Add hoisin sauce, vegetable oil and ginger to large resealable bag. Mix ingredients together in bag.
  3. Place chicken wings inside bag and coat wings with sauce.
  4. Remove chicken wings from bag and place on large baking sheet. Sprinkle peppers on baking sheet with wings. Sprinkle wings with half of the sesame seeds and place in oven.
  5. Cook for approximately 10 to 15 minutes and then remove baking sheet from oven. With tongs, turn wings over to cook on other side. Sprinkle wings with remaining sesame seeds and return baking sheet to oven.
  6. Bake for another 10 to 15 minutes or until wings are thoroughly cooked.
  7. Sprinkle wings with sesame oil and serve with pepper strips.

There are some nights were we want a light, easy and fun meal.  We like to do Appis for Dinner where we’ll do up a few appetizers and everyone can have a bit of everything.

One of our favourites is the Hummus, Chicken and Avocado Flat Bread. It has only a few ingredients making it easy to make and it’s healthy! Plus the girls like it which is a huge plus!

Hummus, Chicken & Avocado Flat Bread

Serves 3
Chicken meets hummus and avocado in this quick, filling and amazingly delicious baked flat bread. Lean chicken and the chickpeas in the hummus give a good amount of protein to help you stay full longer. The creaminess of the hummus and avocado make it easy not to miss the more traditional cheese often on baked flat bread.

Ingredients
  1. 125 g plain flat bread (or pizza base), gluten free if required
  2. 1/2 cup (125 mL) hummus
  3. 1 tomato, ripe, medium, sliced into half moons
  4. 1 cup (250 mL) chicken, breast, cooked/roasted, shredded
  5. 1/4 tsp (1.25 mL) garam masala
  6. 1/4 tsp (1.25 mL) black pepper, freshly ground
  7. 1 avocado, medium, fresh, diced
  8. 1 tsp (5 mL) lime juice, fresh squeezed
  9. cilantro sprigs (optional garnish)
Instructions
  1. Preheat oven to 350°F (190°C).
  2. Place flat bread on baking tray. Spread evenly with hummus.
  3. Slice tomato vertically, lay flat and cut into half moon shapes. Layer sliced tomatoes over the hummus.
  4. Shred chicken and place over tomatoes.
  5. Sprinkle with garam masala and freshly ground black pepper.
  6. Bake for 10-15 minutes until heated through.
  7. Remove from oven and top with the fresh diced avocado and a sprinkle of fresh lime juice. Garnish with minced cilantro (optional garnish).

Slow cooker beer can chicken #chickendotca #CluckToberfest

It’s great to come home from church, put dinner in the slow cooker, then sit back and watch some football!

Oh, I probably should have said…sit back, open a beer and watch some football!

The Chicken Famers teamed up with Rickard’s this month!

I was sent a tasters pack of Rickard’s beers: White, Red, Blond and Dark.

Rickard’s website taught me how to pair beers with some of my favourite foods!

They also have some amazing recipes! 

I got a little creative with their Beer Can Chicken recipe and decided to do something similar in my slow cooker.

Rickard's Beer Can Chicken #chickendotca

Ingredients: 

  • 1 whole chicken (about 4 lbs)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp parsley
  • 1 tsp basil
  • 1/2 tsp pepper
  • 1⁄2 can of your favourite Rickard’s® (I probably used 3/4 of the bottle tho)

I mixed up the ingredients for the rub, rubbed it all over the bird and placed it in the slow cooker.  

Very carefully, I poured the beer in the slow cooker making sure I didn’t get any on the bird.

I put the meat thermometer in, put the lid on and set it on high.

See you in a few hours birdy!

All done!

Once the internal temperature of the chicken reached 165 degrees, she was done!  It took about 3 hours on high.  I don’t like cooking by time alone because the internal temperature for the meat is a much safer way to know that it is correct.

We had it with just asparagus, but this Asparagus & Chicken Salad with Sesame Ginger Dressing would be very yummy with it as well!

Now that activities are in full swing, there are many nights where we need to get something on the table quickly!  We’re eating quickly before heading out the door, between activities or even on the run!

Fast food used to be our crutch, but when we made the choice to live a healthier lifestyle, that isn’t an option any more.

So now our “fast food” is just recipes that don’t take a lot of prep or cook time!

Quick Chicken Pot Pie

This is a family favourite and is really easy with left-over chicken, frozen veggies, canned soup and a pre-made pie crusts!  Prepped, cooked and ready to eat in 50 minutes!

Quick and Easy Chicken Pot Pie

Using convenience products like canned soup, cooked chicken, frozen veggies and refrigerated pie crusts make this comfort food classic a cinch to prepare. It’s chock full of flavor and ready in just 50 minutes.

Ingredients
  1. 1 package refrigerated refrigerated pie crust (2 crusts), at room temperature
  2. 1 can Condensed Cream of Chicken Soup
  3. 1/2 cup milk
  4. 2 cups cubed cooked chicken
  5. 2 2/3 cups frozen mixed vegetables (carrot, green beans, corn, peas), thawed (about 2 2/3 cups)
  6. 1 cup shredded Cheddar cheese
Instructions
  1. Heat the oven to 400°F. Line the bottom of a 9-inch pie plate with 1 pie crust. Trim any excess.
  2. Stir the soup, milk, chicken and vegetables in a medium bowl. Spoon the chicken mixture into the pie plate. Sprinkle with 3/4 cup cheese. Place the remaining pie crust over the filling. Trim any excess. Crimp the edges of the top and bottom crusts together. Using a sharp knife, cut several slits in the top crust.
  3. Bake for 35 minutes or until the crust is golden brown. Sprinkle the crust with the remaining cheese.
