Back to school is just around the corner!

My twitter feed is buzzing with back to school sales and some people’s back to school photos!  My girls go back after Labour Day so we have just a few weeks to start getting ready.  Our back to school shopping will include new clothes and shoes, school supplied and bags.

The girls are very excited!

Me…not so much.

Stop struggling with lunch ideas!

I’m not a fan of making lunches.  I find that I sometimes get stuck in a rut and end up making the same old thing, over and over.  This year, I’m getting prepared with some great lunch ideas from Chicken.ca!!

My girls love hot meals in their Thermos.  They were easy to find too! I went to  Chicken.ca and used their “Advanced Search” to find Lunch meal ideas.  And there were so many to choose from. Here are a couple that I plan to make.

Grilling and summer go hand in hand! #chickendotca

We do a lot of grilling during the summer months.  Sure we grill during the winter, but not as much.

Since we spend every weekend camping, a lot of meals are cooked on the grill or over the fire.  Last weekend I prepared a yummy grilled chicken with a side of camp-fire potatoes and onions. 

Camp-fire Potatoes and Onions:

 5-6 red potatoes, thinly sliced
1 white onion, sliced
4 garlic cloves, finely chopped
3 tbsp butter

Directions:

1. Start the fire and let it burn until the coals are nice and hot!

2. Prepare ingredients.

3. Wrap in tin foil with the shine side in.

4. Place in hot coals in the fire.

5. Flip them and check them to make sure that they don’t burn.

 

Chicken Rub:

1. Mix up in a bowl:

1 teaspoon garlic powder
2 teaspoon onion salt
2 teaspoons ground coriander
1 teaspoon ground black pepper

2. Rub the spice mix on the chicken

3. BBQ

Recently I posted about the great contest that the Chicken Farmers are running where you can win a trip to Ottawa!

Entrants must submit a unique recipe using the required 4 ingredients provided, photo optional.

  • Chicken thighs (boneless or bone-in / skinless or skin-on)
  • Gingerale (Canadian gingerale)
  • Quinoa
  • Mango

I made my own recipe to give you an idea of how easy it can be!

    Marinade
    1. 3/4 cup Ginger ale
    2. 1/4 cup olive oil
    3. 1/4 cup soy sauce
    4. 2 tablespoons fresh lime
    5. 1/8 teaspoon garlic powder
    6. 1 tablespoon honey
    7. 1/4 teaspoon salt
    8. 12 boneless skinless chicken thighs
    Quinoa
    1. 1 cup quinoa
    2. 2 cups water
    3. 1 teaspoon chicken boullion
    Mango Salsa
    1. 3/4 cup mango, peeled and chopped
    2. 1/2 cup corn, drained and rinsed
    3. 1/2 cup black beans, drained and rinsed
    4. 1/4 cup red onion, finely chopped
    5. 1/4 cup red pepper, seeded and chopped
    6. 2 tablespoons fresh lime juice
    7. 2 teaspoons fresh lemon juice
    8. 1 teaspoon olive oil
    Instructions
    1. Combine the Ginger Ale, olive oil, soy sauce, lime juice, garlic powder, honey, and salt. Stir together. Marinade the 12 boneless skinless chicken thighs (covered) in the fridge for at least 1 hour and preferably overnight or 8-10 hours.
    2. Remove from the marinade and grill until completely cooked through. (Internal temp of 165 deg. F)
    3. Meanwhile bring the water and bouillon to boil in a large pot. Cook quinoa as per the instructions on the package.
    4. Remove from the heat and fluff the quinoa. Let stand for about 5-10 minutes.
    For the mango salsa
    1. Prepare all of the ingredients by draining, rinsing, and chopping them as explained in the ingredient list.
    2. Stir all the ingredients together.
    3. Placing a serving of quinoa on each plate. Top with a chicken thigh. Divide the salsa evenly among the four plates.
    4. Enjoy immediately.

Please note:  With my new lifestyle changes, I’m no longer consuming soda pop.  I substituted the Ginger Ale for a modified version of this Homemade Gingerale recipe without the sugar.

For the longest time, chicken has always been our “go to” food.  We love chicken!! (probably why me being a Chicken Farmer Ambassador is so easy!)

Now there is really great news about chicken!

[You] can cook your chicken with the skin on, retaining all the moisture and flavour you love, and then remove it prior to serving to achieve essentially the same health benefit as a skinless cut.

That’s right, a breast of chicken cooked with skin-on and then removed actually has less fat and calories than a skinless breast. How is this possible? When the chicken is cooking, the fat in the breast flows out of the meat and becomes trapped in the skin. The skin of the chicken becomes saturated with fat and retains it once it is removed.
