As the weather gets colder, warm up with some Chicken Soup!! #giveaway #ChickenChat October 25th #chickendotca

As the weather cools down in the fall, slow cookers come out off the shelf and soups and stews are an easy way to stretch your dollar and prepare a warm hearty meal for your family that will last well into the week.

Nothing says fall like “Stew” and “Apples”

And the Chicken Farmers of Canada has an amazing Autumn Chicken and Apple Stew recipe on their site.

Ingredients:

1 whole chicken, cut in parts
1/4 cup (50 mL) apple cider vinegar
1/2 tsp (2 mL) nutmeg, ground
6 whole cloves
1/2 tsp (2 mL) salt
3 carrot(s), peeled and sliced
1/4 tsp (1 mL) pepper
6 apple(s), peeled and sliced
2 tsp (10 mL) Dijon mustard
1 cup (250 mL) cabbage, shredded
1 3/4 cup (440 mL) low-sodium chicken broth, warm
1 cup (250 mL) applesauce

Directions:

  1. Spray large casserole dish with vegetable cooking spray and heat over medium high temperature.
  2. Add chicken and cook, turning to brown on all sides, about 10 minutes.
  3. Sprinkle with nutmeg, salt and pepper.
  4. Spread mustard over chicken pieces; add warm broth, vinegar, cloves and carrots; bring to a boil.
  5. Cover, reduce heat to low and cook 15 minutes. Add apples and cook 5 minutes. Add cabbage, stirring into liquid.
  6. Cook, covered, about 10 minutes more or until fork can be inserted in chicken with ease.
  7. With slotted spoon, remove chicken and vegetables to warm serving bowl and keep warm.
  8. Stir applesauce into liquid; boil on high temperature 5 minutes and pour over chicken and vegetables.
  9. Serve with brown rice, if desired.

Your child can be a member of Canada’s Swim Team and you could be the Swim Parent of the Month! #chickendotca

Do your children swim?  
Swimming is very important in our family. My grandfather’s college roommate drowned. My grandfather instilled in his children the importance of knowing how to swim. My mother did the same for my brother and me and now our girls are learning the importance of swimming as well.  My girls have been swimming since they were 4 months old and are very excited that the Fall session of swimming lessons at our local pool starts soon!

When Chicken Farmers of Canada told me that they were supporting Canada’s Swim Team initiative, I was very excited to help share that information with you!  Rachel and Lauren have both been signed up for Canada’s Swim Team!


Are You a Swim Parent?
We know there are a lot of swim parents in Canada & we want to honour them each month. Do you go above and beyond to make sure you prepare nutritious, healthy meals in preparation for swimming? Swimming Canada and Chicken Farmers of Canada are jointly hosting a Swim Parent of the Month contest in recognition of parents who encourage eating well and being active as part of a healthy lifestyle.

Chicken Farmers of Canada, proud partner of Swimming Canada, supports the Canada’s Swim Team initiative to have every Canadian child swim at least 25 metres before completing elementary school. This initiative not only promotes cardiovascular health and flexibility, but endurance necessary for safety in pools and water. Swimming Canada, in turn, recognizes that a well-balanced diet filled with a variety of whole grains, fruits and vegetables and lean protein goes hand in hand with healthy living.

This is why the two organizations have partnered to bring you this exciting contest.

To become one of our Swim Parents of the Month, all you have to do is email us at nutritiousrecipes@swimming.ca

  1. The title of your favourite recipe at chicken.ca that you would prepare to fuel your swimmer(s)
  2. The correct answer to this skill-testing question – What lean meat is “the official protein of swimming in Canada?” and
  3. Register your child to join Canada’s Swim Team: Sign up here!

Prize:

The name of the monthly winner & their favourite chicken recipes will be posted on the Swim Parent of the Month webpage, and included in a National Swim Team Digital Cookbook to be published in December 2014. A “selfie” .jpg photo of the contest winner may be requested (but not required) for promotion of the contest and digital cookbook.

Just for entering the Parent of the Month contest by September 15th one individual will have a chance to win this food safety cutting board and BBQ utensil set.

Rules and Regulations: 

  1. Be sure to submit the name of the recipe in your email, and your answer to the skill-testing question, as well as your own name, mailing address, and telephone number.
  2. Your mailing address and telephone number will be seen by select staff from Swimming Canada and Chicken Farmers of Canada, and will not be shared or used for any purpose other than to identify the winner of the contest.
  3. By entering the contest you acknowledge that Chicken Farmers of Canada and Swimming Canada will publish the winner’s name, province, and favourite recipe through social media properties and/or at swimming.ca, getswimming.ca, chicken.ca, and momstown.ca.
  4. One winner will be selected by a random draw from all entries that answer the trivia question correctly, submit their favourite recipe from chicken.ca, and register their child to join Canada’s Swim Team.
  5. The deadline for submissions is the 15th of every month and winners will be announced on the last Friday of each month on the Swim Parent of the Month webpage.
  6. The contest is open to all Canadians 18 years of age or older. Winners will be required to demonstrate proof of age in order to receive their prize.
  7. Employees and immediate or domiciled family of Chicken Farmers of Canada or Swimming Canada are not eligible to enter the contest.
  8. For Quebec residents, any litigation respecting the conduct or organization of a publicity contest may be submitted to the Régie des alcools des courses et des jeux for a ruling. Any litigation respecting the awarding of a prize may be submitted to the Régie only for the purpose of helping the parties reach a settlement.

Grilled Chicken Pasta Salad recipe and a #nonakedchicken twitter party with @ChickenDotCA @MBosc and @RickardsBeer !

After our trip to Cuba, we’ve have been imagining what our next vacation might be!  So why not have a little Mexican vacation on our back deck!

The Tequila Marinated Chicken dish is perfect with a fun margarita!


Tequila Marinated Chicken with Rice, Corn and Black Beans

Prep time: 30 minutes
Marinating time: 24 hours
Cook time: 50 minutes

Ingredients:

2 lb chicken breast(s)
1 Tbsp olive oil
4 cloves garlic
1/4 cup lime juice
1/2 cup orange juice
1/4 cup tequila
2 jalapeño pepper
2 1/4 cup honey
1/4 tsp cinnamon, ground
1 Tbsp Mexican chili powder (try Ancho or Morita)
1/4 tsp allspice, ground

1 cup short grain brown rice
1/2 cup corn niblets, frozen 1 can black beans, drained
1 Jalapeño pepper, sliced, for garnish
1 lime, sliced, for garnish

Directions:

  1. Remove skin from the chicken breasts and put chicken in a re-sealable plastic bag.
  2. In a blender or food processor, puré oil, garlic, lime juice, orange juice, tequila, peppers, honey, cinnamon, chili powder and all spice. Pour one quarter of the mixture over the chicken. Seal bag and toss so that the sauce coats all the pieces. Refrigerate up to 24 hours.
  3. Put the remaining marinade in the fridge.
  4. Preheat the barbecue. Drain chicken pieces then grill for 15-20 minutes per side, turning once, until crispy and browned and a thermometer inserted into the thickest piece reads 165°F (74°C).
  5. Bring reserved marinade to a boil in a small pot. Reduce heat and simmer until the sauce has reduced to ½ the original volume.
  6. Cook rice according to package directions in unsalted water. Stir in frozen corn and black beans during last 5 minutes of cooking. Fluff with fork.
  7. To serve, place rice over a large serving platter and top with cooked chicken breasts. Garnish with slices of jalapeño pepper and lime and serve with the reduced tequila sauce.

When Mom Central selected me to be a part of the Club House Flavourful Recipe Mix blog tour, I was very excited.  Club House products are a part of our everyday cooking.

This is a claim that we don’t take lightly in our house. I have blogged before about Craig’s MSG-triggered migraines. We have used many “broths” and “mixes” in the past, with bad results. I was hopeful that Club House wasn’t going to let us down.

Sunday nights we like to have a good “family meal” with all the fixings! I grabbed the package of Club House Tuscan Chicken Flavourful Recipe Mix and checked what ingredients we needed…chicken, onion, red pepper, baby spinach and half and half. I had 3 of the 5. Spinach and half and half aren’t things we normally buy. No worries, I needed to do the shopping for the week anyway.

I started the roasted potatoes first and popped those in the oven.

Then I prepped all my ingredients.

The recipe was easy to follow. 
 

I browned the chicken.  Removed that and cooked the onions and peppers.

Add the milk, spices and put the chicken back in.

Toss in the spinach. Simmer for 20 minutes.

The potatoes were done at the same time!

Now, when the girls asked, I told them the spinach was lettuce. They ate it all up!

Easy for me to make. Healthy for the family. And yummy enough that they want me to make it again!
 
Best part…no migraine for Craig!
