As 2014 is coming to a close, my 3rd year as a Chicken Farmer Ambassador is coming to an end!  I have loved sharing so many amazing recipes and important chicken information for the Chicken Farmers of Canada!  They are an amazing organization that focuses on keeping families healthy and safe.

We’re going to end this year off with a bang!  This sticky Asian Chicken Wing appetizer is going to be loved by everyone and is perfect for your New Year’s Eve celebrations!

Asian Chicken Wings

These addictive Asian-inspired wings are sticky and delicious. Make sure to have lots of napkins on hand when you make this recipe!

Ingredients
  1. 3 lb (1.4 kg) chicken wings, split
  2. 1 cup (250 mL) hoisin sauce
  3. 3 tbsp (45 mL) sesame seeds, toasted
  4. 1 tsp (5 mL) ginger, freshly grated
  5. 2 tbsp (30 mL) vegetable oil
  6. 1/2 green pepper(s), cored, seeded, cut into thin strips
  7. 1/2 red pepper(s), cored, seeded, cut into thin strips
  8. 1 tsp (5 mL) sesame oil
Instructions
  1. Preheat oven to 375°F (190°C).
  2. Add hoisin sauce, vegetable oil and ginger to large resealable bag. Mix ingredients together in bag.
  3. Place chicken wings inside bag and coat wings with sauce.
  4. Remove chicken wings from bag and place on large baking sheet. Sprinkle peppers on baking sheet with wings. Sprinkle wings with half of the sesame seeds and place in oven.
  5. Cook for approximately 10 to 15 minutes and then remove baking sheet from oven. With tongs, turn wings over to cook on other side. Sprinkle wings with remaining sesame seeds and return baking sheet to oven.
  6. Bake for another 10 to 15 minutes or until wings are thoroughly cooked.
  7. Sprinkle wings with sesame oil and serve with pepper strips.

There are some nights were we want a light, easy and fun meal.  We like to do Appis for Dinner where we’ll do up a few appetizers and everyone can have a bit of everything.

One of our favourites is the Hummus, Chicken and Avocado Flat Bread. It has only a few ingredients making it easy to make and it’s healthy! Plus the girls like it which is a huge plus!

Hummus, Chicken & Avocado Flat Bread

Chicken meets hummus and avocado in this quick, filling and amazingly delicious baked flat bread. Lean chicken and the chickpeas in the hummus give a good amount of protein to help you stay full longer. The creaminess of the hummus and avocado make it easy not to miss the more traditional cheese often on baked flat bread.

Ingredients
  1. 125 g plain flat bread (or pizza base), gluten free if required
  2. 1/2 cup (125 mL) hummus
  3. 1 tomato, ripe, medium, sliced into half moons
  4. 1 cup (250 mL) chicken, breast, cooked/roasted, shredded
  5. 1/4 tsp (1.25 mL) garam masala
  6. 1/4 tsp (1.25 mL) black pepper, freshly ground
  7. 1 avocado, medium, fresh, diced
  8. 1 tsp (5 mL) lime juice, fresh squeezed
  9. cilantro sprigs (optional garnish)
Instructions
  1. Preheat oven to 350°F (190°C).
  2. Place flat bread on baking tray. Spread evenly with hummus.
  3. Slice tomato vertically, lay flat and cut into half moon shapes. Layer sliced tomatoes over the hummus.
  4. Shred chicken and place over tomatoes.
  5. Sprinkle with garam masala and freshly ground black pepper.
  6. Bake for 10-15 minutes until heated through.
  7. Remove from oven and top with the fresh diced avocado and a sprinkle of fresh lime juice. Garnish with minced cilantro (optional garnish).

Grilling and summer go hand in hand! #chickendotca

We do a lot of grilling during the summer months.  Sure we grill during the winter, but not as much.

Since we spend every weekend camping, a lot of meals are cooked on the grill or over the fire.  Last weekend I prepared a yummy grilled chicken with a side of camp-fire potatoes and onions. 

Camp-fire Potatoes and Onions:

 5-6 red potatoes, thinly sliced
1 white onion, sliced
4 garlic cloves, finely chopped
3 tbsp butter

Directions:

1. Start the fire and let it burn until the coals are nice and hot!

2. Prepare ingredients.

3. Wrap in tin foil with the shine side in.

4. Place in hot coals in the fire.

5. Flip them and check them to make sure that they don’t burn.

 

Chicken Rub:

1. Mix up in a bowl:

1 teaspoon garlic powder
2 teaspoon onion salt
2 teaspoons ground coriander
1 teaspoon ground black pepper

2. Rub the spice mix on the chicken

Two years ago, I got to do one of my most favourite activities as a CFC Ambassador.  I got to interview a Chicken Farmer! John Opsteen is very passionate about the safety of his chickens and the safety of the product is he producing.

Not everyone is going to be able to chat with a Chicken Farmer about things related to chickens, chicken farming and the chicken industry in Canada.  This is where the Chicken Farmers of Canada comes in. 

Our main responsibility is to ensure that our 2,700 farmers produce the right amount of fresh, safe, high quality chicken to meet Canada’s needs.

Our second responsibility is to represent the interests of chicken farmers and the Canadian chicken industry. CFC plays a key role in developing, partnering or managing programs for Canada’s chicken farmers that prove our producers continue to grow the high quality chicken that Canadians trust.

Who are Chicken Farmers?

  • 2,700 farmers pride themselves on raising safe, fresh, high-quality chicken that Canadians can trust.
  • Chickens in Canada are raised on sustainable and innovative farms from coast to coast.
  • Farmers and their families provide a public good through being responsible stewards of the land and we are committed to using sustainable, good production practices, and to leaving the smallest possible imprint on the environment.

 Who benefits?

  • Our industry provides benefits for communities in rural and urban areas. It means economic and social sustainability for the towns and regions whose future is tightly intertwined with the success of the Canadian  agricultural sector. Farmers provide direct jobs as well as jobs for those who work in processing, retailing and those companies that provide service and inputs. For more information, watch this short video.
  • Consumers get good value for their money: quality food at reasonable prices.

What happens on the farm?

  • From the moment they arrive on the farm to the time they’re shipped to the consumer, the quality and welfare of our chickens is our biggest concern. We give them great food, clean water, and let them roam freely around the barns.
  • What chickens are fed has a direct impact on both the flavour and nutrition of the meat, so it’s important that all chickens are fed the right way. The main ingredient of all chicken feed (over 88%) is grains and grain by-products, protein-producing seeds, and meal made from them such as canola or soybean meal. So, in essence, all chicken is “grain fed.” In much smaller quantities (around 10%), various other protein sources such as meat and bone meal/vegetable fats, are added to improve the nutritional content, taste and texture of the feed. In much, much smaller quantities (1.5%), mineral and vitamin supplements are commonly added to prevent any nutrient deficiencies. For more information, see “What Chickens Eat”.
  • Chicken farmers in Canada are subject to an auditable Animal Care Program, which monitors and enforces the high animal care standards on Canadian chicken farms.
  • The government-recognized, mandatory, on-farm food safety program also emphasizes animal health, cleanliness and safety throughout each step of the production cycle.

Some misconceptions

  • No chickens are ever given hormones or steroids in Canada – the practice has been illegal since the 1960s.
  • Antibiotics can used help to maintain healthy birds or treat sick ones, thereby ensuring a safe food supply for consumers and to prevent any potential food safety problems. Government-verified withdrawal times and random testing mean that the chicken that you buy in grocery stores or in restaurants does not contain any antibiotic residues. The chicken industry proactively manages antibiotic use in order to provide continued confidence to consumers and government. More information on antibiotics can be found here.
