Yummy Chicken BBQ with help from The Beer Store #CBias

The shoppertunites from Social Fabric are always fun!  This week they challenged a few bloggers to go shopping at The Beer Store and prepare a fun Holiday Recipe!

So I headed out to our local Beer Store to pick up a case of Keith’s.  My recipe only called for one, but beer won’t go to waste in our house!  This was the first time I have been to this location since they did the renovations.  They converted it from the old counter-style to the new self-serve format.

I loved how easy it was to get what I needed.  I could browse through the wide isles instead of just looking at a wall of bottles.  They had carts for easier shopping but I knew exactly what I needed and found it easily.  The automatic doors makes moving through the store smooth.
Then it was back home to cook!!
“Oven BBQ Chicken“

This recipe is great becuase it brings the smokiness of the smoker into the oven!!

INGREDIENTS:

1 pound hardwood chips
1 1/2 cups ketchup
1/2 cup brown sugar
1 (12 fluid ounce) can or bottle beer
1/4 cup distilled white vinegar
1/2 cup red wine
1/2 medium onion, diced
1 cup diced green bell pepper (I didn’t use this)
1 tablespoon black pepper
1 (4 pound) whole chicken, cut into 4 pieces (I used 3 lbs of boneless skinless chicken breasts)

Oven BBQ Chicken Ingredients

DIRECTIONS: 

  1. Place wood chips in warm water, and soak for 2 to 3 hours.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. In a small saucepan, blend the ketchup, brown sugar, beer, vinegar, and wine. Mix in the onion, bell pepper, and black pepper. Simmer until thickened, approximately 10 minutes.
  4. Spread wet wood chips evenly in the bottom of a broiler pan, adding enough water to ensure chips remain moist while cooking. Cover with broiler pan grate, and arrange chicken pieces on top. Coat chicken with the sauce, and cook approximately 1 hour, basting regularly.
  5. In a small saucepan over medium heat, simmer any remaining sauce to be used additionally for dipping when served.
Oven Chicken BBQ
This is a great recipe for having at a dinner party.  It yields 6 servings.  Since it’s so easy to make, making a lot of chicken can be done!
I wanted to add Step #1A…drink beer while waiting for chips to get wet.  And you could probably skip all of Step 3 if you wanted to use bottled BBQ sauce…but then you wouldn’t have the flavour of the beer!!
